This recipe is so rich and decadent, and is low on the glycemic index because of the fiber. No compromises on the taste ๐
Crust:
-1 cup almonds
-1/2 cup pitted dates (+/- check the texture)
-1/2 tsp pure vanilla extract
Blend everything and press down in a springform pan or any type of pan with parchment paper
Filling:
-2 cups raw cashews (or cashew flour)
-1 cup pitted dates
-1/2 cup cocoa powder
-1/2 cup natural peanut butter (better to use 100% peanuts in ingredients)
-1 pinch of sea salt or himalayen salt
-1 tsp pure vanilla extract
-1 3/4 cup water or unsweetened plant milk (can use previous youtube video of homemade almond milk)
Blend everything and add on top of crust.
Freeze for 3 hours*
Enjoy! ๐ฅฐ
*Note: if you prefer it like a creamy pudding texture store it in the fridge. If you prefer it as a popsicle fudge texture leave it in the freezer
