For the cookies:

1 1/3 cups AP flour
1 tsp baking soda
1/4 tsp salt
1/3 cup unsweetened cocoa powder
1/2 cup (1 stick) unsalted butter, room temp
1 cup granulated sugar
1 large egg
2 tsp vanilla extract
1/4 tsp espresso powder (or, 3 tablespoons
1 1/2 cups (9 ounces) Nestle Toll House Hot Cocoa and Marshmallow Flavored Morsels (if you don’t have these, feel free to substitute semi-sweet chocolate chunks and place a marshmallow into the center of a dough ball (with the dough covering the entire marshmallow).
1/2 cup powdered sugar (for coating/sprinkling)

Start by creaming together the butter and sugar. I whip it in my stand mixer for 1 minute on low, and then another 30 seconds to 1 minute on high to make the butter fluffy/pale in color.

Add in your egg and vanilla and combine again.

Then, add your cocoa powder and espresso powder. Combine fully.

Add your flour, baking soda, and salt, and mix until some flour streaks remain.

Pour in your hot cocoa & marshmallow chips and mix until the flour has just disappeared.

Section out dough balls on a tray and leave them to freeze/chill for an hour. Don’t skip this step. They will be sticky! I added extra chocolate on top before baking, and this is where you can cover the dough in powdered sugar if you want to do crinkle cookies.

Bake at 350 for 10-12 minutes.

Once you pull them out, slap the tray on a counter top (this gives the cookie more outside ridges/crinkle) and leave them to cool.

Dust powdered sugar over the top, or enjoy as is! :)
