Welcome to this cozy fall, day in the life vlog where I take you along with me for a work from home (WFH) day. I'll share my morning routine with a quick workout, then doing some chores before I start the day. I also share what I eat in a day with my breakfast, lunch and dinner featuring my favorite new fall recipes - homemade low sugar/low calorie Pumpkin Cream Cold Brew and a Brown Sugar Maple Pumpkin Spice Overnight Oats (recipes below!). I wrap up the video with some chit chat about my TBR and books I'm reading list that I have for the rest of 2025. I hope you enjoy this laid back and chill, cozy fall vlog! 🥰 🍁

🎃 Recipes 🎃

Pumpkin Cream Cold Brew:
- 3-4 Tablespoons (or 1/4 cup) Extra Creamy Almond Milk (I use the Almond Breeze one)
- 1 Tablespoon Pumpkin Puree
- A few dashes of Pumpkin Pie Spice (or swap for cinnammon)
- Small dash of salt
- 2 Splenda Packets (or swap for your preferred sweetener)
- Add everything to a frother on cold setting, or whisk by hand
- Pour over your favorite cold brew - I use Stok Espresso Blend

Maple Brown Sugar Pumpkin Spice Overnight Oats
- 1/2 Cup Old Fashioned Oats
- 1 Teaspoon Brown Sugar
- A few dashes of Pumpkin Pie Spice (or cinnamon)
- A small dash of salt
- 1/2 Cup of Unsweetened Vanilla Almond Milk
- 1 Tablespoon Sugar Free Maple Syrup (or regular)
- 1 Tablespoon Chobani Sugar Free Vanilla Greek Yogurt (this makes it creamier, but you can omit and just add 2/3 cup milk instead of 1/2 cup)

Optional Toppings:
- 2 oz of Strawberries (I also like to add banana sometimes)
- 1 Tablespoon Vanilla Granola
- 1 Tablespoon Roasted Chopped Pecans
- 1/2 Tablespoon of Pepitas (Pumpkin Seed Kernels)
