Cooking instructions:
- Cut the shiitake mushrooms in half and chop one spring onion into pieces.
- Put a teaspoon of oil on the pan and sautee the mushrooms until golden. Then add a bit of salt and pepper and the chopped spring onion.
- Cook for 1 minute then put aside in a bowl.
- To the pan add 900 ml of water and stir in 4 healthy tablespoons of white miso paste and dissolve completely. Bring it to a slight boil.
- Heat up a pot of water to cook the rice noodles in.
- To the pan mixture add lemon juice to your liking and two tablespoons of soy sauce and a pinch of salt.
- Poor in the mushrooms, add half of a chopped spring onion and a healthy pinch of celantro. Stir and keep at medium heat while the noodles are boiling for 4 minutes.
- Poor noodles into a deep bowl, add miso soup, top off with fresh celantro, raw spring onion, green nori sprinkle and lemon juice.
