Yippie! Another cooking video! :D
【 INGREDIENTS 】
⋅ 1/2 small onion
⋅ 3-4 garlic cloves
⋅ 1 medium carrot
⋅ 1 medium celery stick
⋅ 1 pound of beef
⋅ 2 tablespoons of butter (divided)
⋅ 2 tablespoons of flour
⋅ 1/4 cup white wine
⋅ 1 cup of stock (I'm using beef, but you can use what you want!)
⋅ 1 tablespoon of tomato paste
⋅ 1 teaspoon of rosemary
⋅ 1 teaspoon of thyme
⋅ Add salt and pepper to taste
FOR MASH:
⋅ 3-4 russet potatoes
⋅ 3 tablespoons of butter
⋅ 1/4 cup milk
⋅ Cheddar cheese (to sprinkle on top of mashed potatoes when assembling)
【 DIRECTIONS 】
⋅ Mince onion, garlic, carrot, and celery
⋅ Melt 1 tablespoon of butter in skillet
⋅ Add onion and garlic until fragrant
⋅ Add carrot and celery, cook until soft (2-3 minutes)
⋅ Add beef, cook until brown (DO NOT STRAIN!)
⋅ Add 1 tablespoon of butter and melt
⋅ Add flour and mix very well
⋅ Add white wine, and deglaze/scrape brown bits
⋅ Add stock of choice and mix well until thick
⋅ Add tomato paste, thyme, rosemary, salt and pepper, and set aside
⋅ Preheat oven to 425
⋅ Peel, quarter and wash potatoes
⋅ Add potatoes in medium sauce pan and fill with water until just covered
⋅ Boil potatoes
⋅ Strain and put back in pan
⋅ Add butter, milk, salt and pepper, and mash
⋅ Put beef mixture in a baking dish
⋅ Layer mashed potatoes on top
⋅ Top with cheese (optional)
⋅ Bake until cheese is golden brown
⋅ Enjoy! :D
