🌿 Tzatziki Recipe
Ingredients:
• English cucumber
• 4–5 cloves of garlic, minced (I also added a shallot!)
• Fresh squeezed lemon juice
• ¼–½ tsp. white pepper
• Kosher salt
• 1–2 tsp. white vinegar
• ¼–½ cup fresh dill, finely chopped (stems removed)
• 2 cups Greek yogurt
• 1 Tbsp. olive oil
Instructions:
Grate cucumber. Wrap in cheesecloth or a tea towel and squeeze out liquid.
Add salt to help extract extra liquid.
In a bowl, combine juiced lemon, extra salt, garlic, vinegar, and olive oil. Stir.
Add the squeezed cucumber and mix. Add white pepper.
Add chopped dill, then yogurt. Mix well. Taste and adjust if needed.
Cover and chill for several hours.
Transfer to a serving bowl, garnish with extra dill and olive oil before serving.
