This is my take on chicken adobo (caramelized)๐ Itโs a sweet and savory garlicky chicken dish. Pairs so well with fresh raw veggies ๐
๐ฅ and I didnโt have any mango I would have that with it.
Recipe:
I used 4 chicken thighs deskinned
Marinate the thighs overnight or just for any amount of time thatโs convenient for you. (Marinating is optional)
Marinade: approx 1 teaspoon soy sauce, salt (I didnโt measure just add salt to taste or how much you normally would add to salt your chicken) same for black pepper Iโd say about 1 teaspoon. Add more black pepper if you like it spicier. Add 1 teaspoon vinegar. I suggest start with less and when you cook it you can add more of whatever you like because itโs easier to adjust that way.
Next in a pan place 5 pieces of palm sugar or 5 tablespoons of brown or white sugar. Melt the sugar on medium heat while stirring frequently. Becareful not to burn the sugar. Once the sugar has melted and looks like similar consistency of carmel (usually within a few minutes) add minced garlic. I used a whole garlic clove. You can use less if you donโt want a lot of garlic in there. Add 2 cloves, 1 bay leaf, a few goji berries, 1 or less star anise (all optional)
Cook the garlic in the caramelized sugar on simmer stirring frequently. Add the chicken thighs that u marinated. If u didnโt have time to marinate thatโs ok. You can add all the ingredients directly in the pan at the same time you add the chicken (salt, soy sauce, vinegar, black pepper). Add one whole medium size tomato and set the heat on high to get it boiling. Once it boils set the heat on simmer and simmer for 1 hour on low heat stirring occasionally and I let the whole tomato break by mashing it a bit once it gets soft so it blends more into the sauce.
For the eggs I hardboiled 5 eggs and deshelled them. Placed them into the pan with the sauce and chicken toward the end of the cooking process so the eggs dont get too over cooked. (Around 45 minutes in.) occasionally turning the eggs so they take up the sauces from all sides.
Serve over rice with the sauce drizzled over the chicken rice and eggs. Eat with cut up fresh ripe or semi ripe mango and cucumbers and tomatoes, hot chili pepper and I like to squeeze some lime or lemon juice but thatโs just how I like it.
