Make authentic chicken Pho Gà in a fraction of the time in the Instant Pot Pressure Cooker
For the spice mix:
-2 Tbsp whole coriander seeds
-4 whole cloves
-1 cinnamon stick
-3 cardamom pods
-2 star anise
All of these toasted until fragrant
For the broth:
- 1.5 kg chicken drumsticks with bone in or use a whole chicken, high quality if possible
-3 onions, peeled and halved
-5-7 thick slices of ginger, unpeeled
-2 cloves of garlic, peeled
-1 Tbsp rock sugar or brown sugar
-4 Tbsp fish sauce
-1 Tbsp salt
-1 sachet of spice mix we just made
-White part and roots of 1 bunch green onions
-Stems of cilantro bunch
Pressure cook for 30min and discard everything after straining the broth (keeping the broth) but the chicken leg meat
For the bowl:
-1 pack rice noodles, soaked for 30min
-1 bunch cilantro, leafy parts, chopped
-1 yellow or white onion, sliced thinly
-1 bunch green onions, green parts, chopped
-cracked black pepper to taste
-Lime, cut into wedges
Dip prepared noodles in boiling water for 30 seconds, add other toppings before adding broth
Optional:
-bean sprouts
-thai basil
-thai chili peppers 🌶
-vietnamese mint
-hoisin sauce
-sriracha
