Curry recipe
Ingredients:
2 chicken fillets
2 medium onions
1 pepper or 1 broccoli crown (or both)
1 can of coconut milk
2 cups of water
2.5 cups of rice
Herbs for curry stew:
1 tablespoon coriander
1.5 tablespoon curry powder
1 tablespoon of ginger
1 tablespoon of red pepper powder
1 tablespoon of turmeric powder
¼ teaspoon of cayenne pepper
Herbs for chicken marinade:
1/4 tablespoon ginger
1/4 tablespoon coriander
1/4 tablespoon curry powder
1/4 tablespoon of red pepper powder
1/4 tablespoon of turmeric powder
Pinch of cayenne pepper
1 tablespoon of olive oil
Preparation:
Before you start cooking mix all the herbs for chicken marinade in a bowl. Cut the chicken into small cubes and let it sit for at least 20 minutes.
Meanwhile cook the rice so that it’s cooled off a bit by the time your curry is done.
Chop up the veggies and put them in a pot. Cook them until they’re almost soft with a bit of olive oil. Once they are almost soft add 1 cup of water and all the herb for curry stew. Let everything simmer slowly until sauce gets thicker. Once the sauce thickened add the second cup of water.
Once the chicken is marinated cook the chicken in a separate pan for about 10 minutes. Then add chicken to curry mix and stir.
Once everything is mixed well add about 1/2 a can of coconut milk (or more if you want more coconut)
If mixture is still too think add a bit more water till you have the desired thickness. Simmer for another 5
