Recipe for the crust/dough (makes two crusts):

2 and 1/2 cups all-purpose flour
A dash, or 1 teaspoon salt
6 Tablespoons of unsalted butter (this needs to be cold!)
2/3 cup vegetable shortening (also needs to be cold!)
1/2 cup ice water (minus the ice cubes for volume)

Combine the flour and salt in a bowl.
Cube the cold butter.
Comvine the butter cubes and vegetable shortening in with the bowl of dry ingredients, using a pastry cutter or food processor to break down the fats into small pea-size and smaller chunks/bits.
Add one tablespoon of water at a time, mixing in between with a rubber spatula, until the half cup of water is combined.
Place your crumbly dough onto a clean, floured surface (a pastry mat is great for this) and start to press and combine the bits of dough until they form a ball that doesn’t fall apart. A few quick, hard presses work best so that you aren’t melting the butter or overworking the dough.
Cut the dough ball in half, and wrap each half to keep fresh while it chills in the fridge for AT LEAST 30 minutes. I recommend an hour or two.
Let the dough thaw for about 10-15 minutes before attempting to roll it out.
